Bio

Sam founded Black Rabbit Distillery in 2021 with an intention to make Rye Whiskey. He has a passion for championing local provenance and an unhealthy interest in how flavor can be created through the processes of fermentation and distillation using novel approaches.

Grain, Steam, Esters and Ketones

An informal exploration of how retaining grain solids in the wash during fermentation and distillation, along with the use of direct steam heating, can influence ester and ketone formation and ultimately shape the character of new make spirit. The session will also introduce birectification as an analytical tool for distillers, exploring how it can be used to better understand spirit composition and quality.
